Please do following this steps to hide employee dropdown
Steps to manage
1. Open the app > click Settings > General
2. In General setting > Employee & Location > enable option Hide employee on front store if service has only one employee
3. Click Save
NOTE
1. Employee dropdown can only be hidden if the service has only one employee.
2. All employee information that related to the service will be hidden: employee dropdown in booking form, employee name in email, employee name in calendar.

In this case, you can’t hide the dropdown. Because your customer must select one of the employee to show calendar (time availability).
We recommend you should change Employee text to another name in Settings > Text
